Golden Keys To Health 

improving dietary and food preparation practicesCalifornia Extension nutrition specialists developed a program called “Cooking for Better Health,” to help low-income Hispanic families improve dietary and food preparation practices. Program evaluations indicated that all program participants changed some of their food preparation behaviors such as less frying of foods, drinking lower fat milk and buying lower fat foods. Extension Food and Nutrition Program participants showed the biggest improvements in food behavior in meal planning, comparing prices, selecting healthy foods, and reading labels for fat content.  

Colorado State Extension educators conducted a bilingual program called “La Cocina Saludable” (the Healthy Kitchen) that trained Hispanic grandmothers as nutrition educators. Follow-up evaluations showed that 78 percent of program participants made positive nutritional behavior changes, 70 percent made major changes in eating habits, 71 percent said they ate more nutritiously, and 64 percent lowered their food budgets. Forty-two graduates in one Colorado County saved an average of $91 a month on their food bills.
