Milk? Need Calcium?
Despite all those
milk-mustached celebrity advertisements, milk consumption has
decreased 40 percent in the last 20 years. Nutritionists are
scrambling to find new ways for teens to eat calcium-rich food. Not
only are boys and girls at risk for osteoporosis later in life, but
reduced calcium consumption is also associated with colon cancer and
hypertension. Nine western states California, Colorado, Hawaii,
Idaho, Nevada, New Mexico, Utah, Washington and Wyoming have
teamed up in a unique study to address this health issue by looking at
ethnic food preferences and suggesting alternatives to whole milk.
Hispanics get more from cheese and beans and Asians from seaweed and
soy. Knowing these crucial differences will help nutrition educators
tailor recipes and lesson plans.
