UNR: CABNR Winemaking and Analysis or download as PDF format. Wine making procedures for our experimental wines. These wines are made very simply. We try to reduce the influence of the wine making procedure so that we can more accurately evaluate the fruit quality characteristics of the vines. Therefore, we bottle these wines shortly after fermentation is complete. This reducse the influence yeast flavor components. In addition we do not use oak or secondary fermentations like malolactic fermentation. |
